summer bbq – the new basics

My friends and I had a BBQ the other weekend, and there are a few creative recipes we came up with that area a must for your menu:

alcoholic popsicles:

One of our great accomplishments was homemade popsicles to cool us down while that glorious sun was shining.  Should you want to make them sans-alcohol, it’s easy to leave out the booze.  Otherwise, grab these ingredients:

– white wine

– raspberries or blackberries

– fresh mint

– fresh lime

Muddle the fruit with some mint and lime, fill the popsicle container with half of that mixture, and the other half with wine, and put in the freezer until frozen.  It’s a take on a mojito, and sangria – but frozen in the oh-so-fun lickable delight that is a popsicle.

Fruit combinations that I’m excited to try next:

– strawberry and kiwi

– blueberry and basil

– orange and ginger

vodka tomatoes:

This may blow your mind, and is so inventive! Thanks to my roommates for thinking this one up:

– a few cases of cherry tomatoes

– a mickey of vodka

– 1 lemon

– caesar rim salt

prick a few holes in the tomatoes with a fork, put them all in a bowl and squeeze some lemon in, add some caesar salt, and soak them in the mickey of vodka. We soaked ours for maybe 4 hours and they were potent! Drain them before serving and save that extra vodka for your non-vegan friend’s caesars!

homemade veggie burgers:

This recipe combines a lot of my favourite things – and just mix them all in a bowl and make it into patties! Delicious! If you have a big group, I’d suggest doubling the recipe.  (Recipe courtesy of Whole Foods recipe app).

– 1 c cooked brown rice

– 1 c cooked no-salt added black beans (rinsed and drained)

– 1/4 c diced tomato

– 1/4 c diced roasted red pepper

– 1/4 c shredded carrot

– 1 c cooked and mashed yam

– 1/4 c cilantro

– 1 tbsp chili powder

– 1 tsp cumin

– 3 green onions, finely chopped

– 3 tbsp nutritional yeast

– 2 cloves garlic, minced

– 1 tsp hot sauce

With all these, you have the making of a pretty damn good bbq that is very vegan friendly. A few roasted corn on the cobs, and some grilled potatoes, and you are set!

PS – for the popsicles, keep in mind that not all wine is vegan. I know, this is pretty devastating to find out.  I’m not going to lie, I often look the other way.  In case you don’t want to, here is one website I found that has looked into a number of wines and declared them animal-free.
